The signature tasting menu moves through eight chapters - each one built around a single Queensland ingredient at peak season, presented in forms that reveal the produce rather than disguise it.

Queensland Provenance Menu

A printed provenance card accompanies every table, mapping each dish's core ingredient back to its specific grower, fishing co-operative, or regional producer - a level of transparency rare in Brisbane fine dining.

Chef's Table Experience

A six-seat kitchen counter positioned directly beside the pass allows a small group of guests each evening to watch the brigade at work and receive direct commentary from Chef Tran between courses.

For groups of ten or more, Chef Tran accepts advance commissions for entirely custom menus - designed around dietary requirements, cultural traditions, or a specific narrative the host wants the meal to tell.
